Why Separate Cutting Boards Can Simplify Food Safety
You can safely use one cutting board for different foods if it is washed thoroughly between tasks, but separate boards make it easier to keep raw meat, poultry, and seafood away from produce and ready-to-eat foods. The advantage is less opportunity for a hurried mistake.
USDA also recommends replacing boards that become excessively worn or develop deep grooves that are difficult to clean. The material matters less than keeping the board clean, intact, and appropriate for the job.
