Why Induction Cookware Needs the Right Metal

Induction cooktops heat cookware through a magnetic field, so the pan needs a magnetic base that can couple with the cooktop. Cast iron and many stainless-steel pans work well; plain aluminum, copper, and some stainless alloys do not unless they include a compatible magnetic layer.

A quick screening test is a refrigerator magnet. If it sticks firmly to the bottom of the pan, the cookware is likely induction-compatible, although the manufacturer's marking remains the best confirmation.
