Why Honing and Sharpening a Knife Are Different Jobs
Sharpening removes metal to create a new cutting edge. Honing is a lighter maintenance step that helps straighten or refine an edge that has become slightly misaligned during normal use. They solve related problems, but they are not the same operation.
A knife that feels a little tired may respond to honing. A genuinely dull or damaged edge needs sharpening. Treating every loss of performance as a sharpening problem can remove more metal than necessary.
