Why Brown Sugar Turns Into a Brick

Brown sugar contains molasses and normally holds some moisture. As that moisture escapes, the crystals bind together into a hard mass.

Hardened brown sugar can be softened by placing a damp paper towel inside an open plastic bag and placing inside the sugar container. Leave it sealed for several days for the full softening effect.
