Why a Salad Spinner Is More Useful Than It Looks

A salad spinner removes surface water much faster than letting washed greens sit in a colander. Drier leaves hold dressing better because the dressing is not immediately diluted by rinse water, and removing excess moisture also makes washed greens easier to store.

It is useful beyond lettuce, too. Herbs, leafy vegetables, and other delicate produce that trap water between leaves can all benefit from the same centrifugal drying.
