Why a Dutch Oven Holds Heat So Well
A heavy Dutch oven has a lot of thermal mass. Once the pot is hot, its thick walls and lid do not change temperature as quickly as a thin pan, which helps smooth out the repeated heating and cooling that happens as a burner or oven cycles.
That makes it particularly good for braises, stews, bread, frying, and other cooking where steady heat matters more than quick response. The same weight that makes it slow to heat is part of what makes it useful.
